How do I choose interfacing weight?

Match it to the behaviour you want in the finished piece, not to the fabric weight. A collar should be crisper than the shirt. Always fuse a test piece on a scrap first.

Why does my interfacing bubble after washing?

Either the fabric shrank and the interfacing did not, or the fuse was never properly set. Pre-wash, then press with firm pressure and steam for the full stated time.
